What airtight actually means, and when it matters

Airtight is not a graded standard on consumer food containers, so it means whatever the manufacturer wants it to. What you can compare is the mechanism:

  • Gasketed push-button. A silicone gasket compressed by a button mechanism. Good seal, one-handed opening, and the button traps flour and needs disassembly to clean.
  • Side-locking latches with a gasket. Two or four latches compressing a gasket. Good seal, cheap to produce, and the latches are the failure point on this style.
  • Screw lid with a gasket. The most reliable mechanism because there is nothing to break, and the slowest to use.
  • Friction lid, no gasket. Not airtight in any useful sense. Keeps dust out, keeps nothing else out.

Where it matters most is pests. Larvae chew through thin cardboard and plastic bags but cannot get through rigid plastic, glass or metal, and a properly sealed lid stops them crawling in through folds and gaps. That is the strongest single argument for decanting and it is set out in full on pantry moths.

Square beats round, and it is not close

A round canister on a rectangular shelf wastes the space between it and its neighbours, and the corners at each end of the row. Square and rectangular footprints tessellate, which on a full shelf is a substantial difference in how much you actually store.

Round containers are easier to scoop from and easier to clean. That is a real trade — just make it deliberately rather than by accident, and make it in a small pantry only if you have the space to spare.

What to decant and what to leave alone

  • Decant: flour, sugar, rice, pasta, cereal, oats, anything in a bag that will not stand up, and anything you have had a pest problem with.
  • Do not decant: tins, sealed jars, anything with cooking instructions you will need, and anything you get through in a week.
